First, trim the ends of the green beans, wash them without cutting, blanch them in boiling water with salt and oil, cover and simmer for two to three minutes. Remove and cut into sections. Heat the wok, stir-fry the green beans until dry, slightly charred, and remove from heat. This step is crucial to avoid deep-frying. In another wok, add oil, ginger, garlic, fermented black beans, and Sichuan peppercorns. Stir-fry until fragrant, then add the green beans and stir-fry evenly over medium to low heat without adding water. At this point, add seasoning such as soy sauce and dark soy sauce for stir-frying. If you have perilla leaves, it will enhance the aroma. Add a pinch of salt and remove from heat. The vegetarian dish is now ready to be served and it's incredibly delicious~
