Mom's Flavor - Stir-Fried Gourd
Recreating my mother's flavors has been half successful during the lockdown. The gourd used in the photo updated on 12.11 is relatively large, about the size of an adult woman's forearm, so please adjust the seasoning to your preference. Updated on 23.5.13: If you prefer a lighter taste, there's no need to add extra salt; the flavors from the soy sauce and oyster sauce are sufficient. If salt is needed, taste it just before serving to adjust accordingly. Updated on 24.1.13: Cook on high heat throughout, using very little vinegar and sugar, primarily to enhance freshness, with the main flavors coming from the oyster sauce and soy sauce.

How To Make

Preparation: Slice the gourd, chop the garlic, and cut the chili into pieces.

Heat oil in a pan, add the chopped chili to sauté, then add the sliced gourd and stir-fry. Add 1 tablespoon of oyster sauce and 0.5 tablespoon of soy sauce.

Add a pinch of vinegar and a pinch of sugar to enhance the flavor, then add a small amount of water to simmer.

As shown above, this is the amount of sugar to add.

When the dish is about 90% cooked and looks translucent, add the minced garlic and sauté for a moment to release the garlic aroma. Turn off the heat and cover for two to three minutes.
