Since I grew kale this year, my friends have shared various ways to prepare it with me. One such dish is kale mixed with dried tofu. As we all know, the preparation of dried tofu and plantain herbs is simple and quick, with a delicious taste. When spring arrives, a dish of dried tofu and plantain herbs immediately brings the essence of spring to your palate. Now that it’s summer, while we may not have the tender plantain herbs of early spring, kale is perfect for this recipe. The preparation is almost identical to that of dried tofu and plantain herbs, making it equally simple and quick. I personally prefer to maintain the original flavor of the ingredients and create healthy, delicious dishes with minimal seasoning. Therefore, this dish uses only light soy sauce (with enough saltiness), sesame oil, and a little sugar for enhancement. The resulting cold dish can rival that of dried tofu and plantain herbs. Aside from the absence of the unique aroma of plantain herbs, everything else is quite similar. Kale has a slightly coarser texture, but when blanched, its color becomes more vibrant, offering a unique appeal. Kale is extremely low in calories, making it a very healthy and nutritious option, perfectly suitable for this season.
