Rub the pork tripe inside and out with a suitable amount of cooking wine and flour, then rinse it thoroughly.

In a pot, add clean water with scallions, ginger, and cooking wine, then blanch the pork tripe. Once boiling, cook for about 3 minutes before turning off the heat.

After cleaning, make sure to thoroughly scrape off the yellowish-white parts shown in the image.

Once clean, place the tripe in a pressure cooker with scallions, ginger, and cooking wine, adding just enough water to cover the tripe. Pressure cook for about half an hour.

After cooking, remove the tripe and let it cool slightly, then slice or cut it into strips against the grain.
