Pig Lung and Pear Loquat Sweet Soup
In spring, it's important to nourish the lungs, especially in Guangdong where humidity is high, often leading to coughs. Growing up, I had weak bronchial tubes, so whenever I had a severe cough in spring, my mother would make me a bowl of pig lung and pear sweet soup to soothe my lungs and stop the cough.

Goji berries | to taste |
Lily bulbs | to taste |

How To Make

First, order the pig lung from the butcher at the market. The cleaning process involves leaving the lung whole and flushing it with hot water from a faucet. Block the trachea with your hand while rinsing until the water runs clear, which takes about five to six minutes. Once the color changes from red to pale white, it's ready to cut and rinse with water.

Add southern and northern apricots, goji berries, lily bulbs, and honey dates into the pot and boil them until they're soft.

After twenty minutes, add the pear.

Ten minutes later, add the loquat and cover the pot to boil for another twenty minutes.

Finally, add rock sugar. If you find the flavors of the ingredients have infused well, you can turn off the heat!
