How To Make

Choose clean pig lungs without excessive bruising.

Insert water through the trachea of the pig lung until it expands significantly. Hold it securely, as it’s quite heavy.

Let it rest flat to allow excess water, foam, and blood to flow out, at which point the pig lung will appear quite red.

After about ten rinses, the pig lung will turn white, with a reduced amount of foam and lighter blood water. Rinsing is complete.

Cut the pig lung into pieces.

Be cautious of the lymph nodes on the trachea during the cutting process.

This is lymphatic tissue, which needs to be removed.

After cutting, rinse twice to remove blood water.

Rinsed pig lungs, well prepared.

Place the pig lungs in the pot with ginger slices and cooking wine. No need to add water; cover with a lid, and you will see a lot of water released later.

Bring the pig lungs to a boil; the blood and water will be expelled.

Rinse two more times.

The cooked pig lungs will appear white.
