Braised Free-Range Chicken with Shiitake Mushrooms (Pressure Cooker)
Materials
Shiitake mushrooms | to taste |
Sugar | for caramelizing |

How To Make

Place the cleaned and cut chicken pieces in cold water and boil to remove blood scum (during this time, wash the shiitake mushrooms and tear them into pieces, then blanch them for later use).

Remove the blanched chicken pieces and pour the remaining chicken broth into the inner pot of the electric pressure cooker.

Add oil to the pot, and once heated, add sugar to caramelize it. (If done well, you won’t need to add dark soy sauce.) Then, add scallions, ginger, and star anise to sauté until fragrant. Include the chicken pieces for color.

Add shiitake mushrooms, salt, light soy sauce, chicken essence (optional), and cooking wine, mixing thoroughly.

Transfer all ingredients from the pot into the electric pressure cooker.

Since the farm-raised chicken is tough, set the cooking time for 30 minutes. Now, wait for the delicious dish to be ready!

Serve in a bowl. The meat is tender and delicious.
