However, while store-bought chicken becomes tender after about twenty minutes of boiling, the farm-raised chicken remains tough even after an hour of simmering. That's when I remembered the pressure cooker.

How To Make

  1. Place the cleaned and cut chicken pieces in cold water and boil to remove blood scum (during this time, wash the shiitake mushrooms and tear them into pieces, then blanch them for later use).

  3. Add oil to the pot, and once heated, add sugar to caramelize it. (If done well, you won’t need to add dark soy sauce.) Then, add scallions, ginger, and star anise to sauté until fragrant. Include the chicken pieces for color.

  4. Add shiitake mushrooms, salt, light soy sauce, chicken essence (optional), and cooking wine, mixing thoroughly.
