Delicious Three-Yellow Chicken with Fresh Tea Tree Mushrooms

Tea Tree Mushrooms | About 250 grams |
Three-Yellow Chicken | Half a chicken |
Ginger | 8 slices |
Carrot | Half a piece |
Spring Onion | Half a piece |
Salt | About 5-10 grams |
Garlic | 4 cloves |
Sugar | 3 grams |
Soy Sauce | 5 tablespoons |
Sichuan Peppercorns | 20 for frying, then remove and discard |
Potato | 1 medium |
Onion | Half a piece |
Star Anise | 1-2 pieces |
How To Make

Prepare the side ingredients.

In the electric pressure cooker, lay the chopped ingredients at the bottom, add slices of ginger, smashed garlic, and large pieces of spring onion.

Freshly cleaned tea tree mushrooms.

Half a three-yellow chicken, cleaned and drained.

Pour oil into the pot, add ginger, garlic, 1-2 star anise, and some Sichuan peppercorns. Stir until fragrant, then discard the peppercorns.

Add the chicken pieces and stir-fry.

Once the chicken has turned mostly white, add the tea tree mushrooms and stir-fry.

A delightful aroma fills the air, the mushrooms soften, turn off the heat and prepare to transfer to the pressure cooker.

Place everything in the electric pressure cooker, adding enough water to cover the chicken. Season with salt, soy sauce, oyster sauce, sugar, and other seasonings. Cover the pot and cook; I turned it 3/4 of the way.

It’s ready! The potatoes have mostly dissolved, the chicken is tender, and the aroma of mushrooms fills the house. There's enough for me and the two kids; we filled two large plates with chicken and about half a plate of fresh mushrooms and eggs. The chicken is all gone, and we still wanted more rice. I used the leftover chicken broth to make noodles for dinner, absolutely no waste.
