Braised Chicken with Mushrooms
Materials
Hazel mushrooms | 100g |
Chicken thigh meat | 800g |
Potato | 1 |
Green onion | 1/2 |
Ginger | several slices |
Star anise | 3-5 |
Light soy sauce | 3 tablespoons |
Dark soy sauce | 1 tablespoon |
Cooking wine | 1 tablespoon |
Bay leaves | 2-3 |
Salt | to taste |
Rock sugar | to taste |
Dried chili peppers | 2 |
How To Make

Prepare the ingredients, soaking the hazel mushrooms in advance and cutting the potato into chunks.

Cut the chicken thighs into pieces.

Place the chicken pieces into cold water, add some cooking wine, and bring to a boil.

Skim off the scum.

Remove the chicken pieces.

Add COFCO Fu Lin Men hometown-flavored peanut oil to the pot.

Add prepped green onions, ginger, and spices, and stir-fry until fragrant.

Add the chicken pieces and stir-fry until golden.

Add oyster sauce, rock sugar, soy sauce, and dark soy sauce for seasoning.

Continue to stir-fry.

Add hazel mushrooms and continue to stir-fry evenly.

Pour in enough boiling water to cover the ingredients, cover the pot, and simmer on low heat for 20 minutes.

Add the potato and continue to simmer for another ten minutes until soft.
