Stir-Fried Celery with Squid

Celery | 150g |
Cooking Wine | 5ml |
Chopped Green Onion | 5g |
Ginger Strips | 5g |
Light Soy Sauce | 10ml |
Water | 10ml |
Salt | 1g |
Sugar | 3g |
How To Make

Mix water, light soy sauce, salt, and sugar to make a marinade for later use.

Slice the celery at a diagonal into thin pieces.

Prepare the squid. Cut the squid into three parts: head, tail, and body. Split the squid tentacles and cut them into strips. Cut the tail into pieces.

Remove the internal hard cartilage from the squid body (you can feel it inside, it's only one piece). You can either cut it into rings or along the vertical lines of the squid for strips (rings are easier, strips are better for eating).

Bring water to a boil and quickly add the prepared squid. Remove the squid as soon as it curls up.

In a hot pan, add oil, chopped green onion, and ginger strips. Stir on low heat to release the aroma.

Add the celery and sauté on low heat for 1-2 minutes until wilted. Add the squid, stir well, and then add the marinade. Stir-fry on medium heat for 1 minute until done.
