Fruit Cake ๐ŸŽ‚ Birthday Cake

Fruit Cake ๐ŸŽ‚ Birthday Cake
I've made many chiffon cakes and have always wanted to try frosting with cream for a birthday cake ๐ŸŽ‚. Today, November 28, 2023, is my little one’s birthday, so I specially made a fruit cake. My kid wanted a peach cake, so here it is! When whipping the whipped cream, the ratio of cream to sugar is 10:1. The key to whipping cream is two points: low temperature and consistent speed. 250 ml of cream is enough for frosting a 6-inch cake, but not enough for piping. Two boxes of 250 ml cream are enough for frosting an 8-inch cake, but slightly lacking for piping. I’m quite satisfied with the first cake I made. Both of my kids said it tastes great, with less cream and lots of fruit. Just wanted to document this!

Materials

Whipped cream 250 ml
White sugar 25 g
Strawberries to taste
Grapes to taste
Oranges to taste

How To Make

  1. Prepare a chiffon cake base of 8 inches in advance. I made this one just this afternoon. I’ve also documented how to make chiffon cake in a previous recipe, so I won't go into that here.

  3. Pour the cream into a bowl that is free of water and oil, add white sugar, and whip at low speed with an electric mixer.

  4. When you lift the beater, the dripping cream should maintain its shape on the surface for 3-5 seconds with slight markings. This state is suitable for making mousse cake.

  5. Continue whipping at low speed. You will feel increased resistance, and the markings in the cream will become very clear. After lifting the beater, the cream should form short, upright peaks. This state is suitable for frosting cupcakes, spreading on cakes, and filling cake rolls. This is what you need for cake-making.

  6. Using a cake slicer to cut the chiffon cake, I cut 4 slices but only used 3. Please ignore the top slice ๐Ÿ˜‚, that’s just the top layer of the cake I peeled off, which actually looked quite good before I did.

  7. Slice the strawberries, cut the grapes in half, peel the oranges, and slice the peach. I didn’t take a picture of all the fruit, so here’s a photo of the leftovers.

  13. Frost the sides and top of the cake with whipped cream. It’s my first time doing this, and without a turntable, it’s not very smooth, but here it is ๐Ÿ˜‚.
