Clay Pot Soup with Pork Ribs and Old Hen - Electric Pressure Cooker

How To Make

Clean and chop the tea tree mushrooms, carrots, Chinese yam, and ginger, and set them aside.

Boil the chicken in water, then discard the water. This helps remove any blood and odors, making the chicken broth clear and flavorful. If you don't like chicken, you can substitute it with pork ribs, duck, or pigeon.

Place the chicken at the bottom of a bowl, then add the prepared ingredients. Pour enough water to cover the ingredients. The item in the picture is a type of fish noodle that is a specialty from my hometown; you can skip that.

Pour a small amount of water into the electric pressure cooker, not more than 2cm deep. You do not need to place a rack; just put the bowl directly inside. If your bowl is shorter, you can use a rack to prevent water from splashing into it.

Set the timer for 30 minutes. If you prefer a softer texture, you can extend the cooking time. If you want to cook rice simultaneously, place a rack above the soup bowl, add washed rice with a little less water, and steam them together. This way, you can take your child for a walk.

Once you're back from your walk, the soup will be ready. Add a little salt and some chopped green onions if you like.
