Cold Spinach and Vermicelli Salad

How To Make

Prepare all the ingredients as shown in the picture.

Rinse the spinach thoroughly, and blanch it in boiling water for 1 minute as shown in the image.

Drain and rinse with cold water to cool, then set aside as shown in the image.

Soak vermicelli in hot water until soft or boil briefly, then rinse with cold water and set aside as shown in the image.

Slice the scallions, mince the garlic, and combine with salt, a pinch of sugar, soy sauce, and vinegar. Set aside as shown in the image.

Prepare the dressing: mix all the ingredients from the previous step in a container until well combined, as shown in the image. Add chili oil if you like it spicy for extra flavor!

Combine the blanched spinach and vermicelli in a bowl, then drizzle the prepared dressing over them, and mix well as shown in the image.

Once mixed well, serve on a plate. A simple, refreshing, and appetizing dish is ready to enjoy! 😁
