Thoroughly wash the Brussels sprouts, trim the ends, and cut them in half. Blanch them in boiling water with a pinch of salt for 10 minutes. Once cooked, remove and drain the water. Slice the pork and season with salt, cooking wine, and egg white. Mix well, add starch, and drizzle with oil to marinate. Stir-fry the pork until it changes color, then add scallions, ginger, and garlic, and sauté until fragrant. Add soy sauce, sugar, salt, and pepper, stir well, drizzle with oil, and plate.
