How To Make
-
Start with a whole chicken, cut into pieces, blanch and clean it. Place in a pot with water, spices, bay leaves, star anise, peppercorns, dried chilies, ginger slices, and onions or scallions! After stewing, heat oil in a separate pan, sauté ginger, garlic, and scallions until fragrant, then add the chicken spice mix. Stir-fry, then add potatoes and the stewed chicken! Add water and simmer on medium to low heat! Add chilies or garlic shoots!
-
For the pork rib soup, clean the ribs and blanch them, then rinse and place them in a pot. Add jujubes, astragalus, sea dragon, ginseng, angelica, and sweet corn, plus enough water to cover. Bring to a boil and then simmer on low for one and a half hours! Add goji berries and salt to taste before serving!
-
For the vegetable rice, mix in peas, corn, carrots, and Chinese sausage into the rice.
-
For stir-fried silkworms, clean the silkworms and boil for about 10 minutes, then cut each in half, discarding any debris. Toss them in potato starch lightly. Do not overcoat! Fry until done without stirring too much. In a separate pan, fry ginger, garlic, and add some celery and dried chilies, then add the silkworms. Use spicy seasoning or barbecue spice for flavor! This is a fantastic dish to enjoy with drinks.
-
For the tenderloin, slice it and marinate with salt and cooking wine. Add potato starch and water gradually until the mixture is slightly runny. Fry the meat in oil until crispy. In a new pan, combine vinegar, sugar, and stir continuously, then add chopped scallions and carrot strips, stir-fry, and then mix in the meat! Top with cilantro! For the sauce, orange juice or ketchup can be used based on personal preference.
-
For the fried sweet potato sticks, cut the sweet potatoes into strips and lightly water them to help the starch stick. Shake them in starch lightly. Fry them at a medium temperature without rushing. Once they form a crust, they will separate easily. After frying, sprinkle some plum powder for flavor! Add salted egg yolk to the pan, stir until frothy, then quickly mix in the sweet potatoes! Salted egg yolk can be served with bread, in buns, or over noodles! It's versatile! Add some sugar after serving!
-
For the steamed bass, place the fish in a steamer, using ginger and scallions under the fish. After steaming, arrange it on a plate. Heat the fish sauce until boiling and pour it over the fish! Garnish with scallions and red chili segments, then pour some hot oil over the garnishes!
-
For the sea snail, cook it in water with ginger and cooking wine for about three minutes for smaller ones! Prepare a dipping sauce with coriander, chili, garlic, and a splash of boiled juice!
-
For stir-fried clams, start by heating the pan to release water, then remove and add oil. Sauté ginger, garlic, and dried chilies until fragrant, then add the clams, seasoning with salt, soy sauce, and cumin powder to reduce liquid! Sprinkle with cilantro before serving! Quickly scoop out opened clams to avoid losing the meat!
-
For the prawns, cook them thoroughly until the shells are crispy, then add a bit of salt and ginger. Sauté briefly, adjusting the flavor with ketchup and a bit of sugar when finished. If you're busy, there's no need to rush!
-
For steamed mantis shrimp, add ginger and scallions while steaming.
-
Stir-fried asparagus with eggs.
