Spicy Pepper and Tomato Stir-Fried Eggs
This dish is a must-have meal accompaniment in almost every household, but each family has its own way of preparing it. One hundred families can create one hundred different flavors of tomato and egg. You can add sugar, vinegar, garlic chives, green peppers, spicy peppers, onions, or scallions, among other ingredients. Today, I will share a very basic recipe.

Tomatoes | 2 |
Spicy Pepper | 1 |
Soy Sauce | 1 tablespoon |
Salt | a pinch |
Onion | a small amount |
White Sugar | a pinch |
How To Make

Prepare the ingredients in advance: cut the tomatoes into chunks, the spicy pepper into diamond shapes, the onion into small pieces, and whisk the eggs. Heat oil in a pan until it starts to smoke, then pour in the eggs and scramble until cooked. Set aside.

Add more oil to the pan, and once heated, toss in the onions to sauté until fragrant.

Add the tomatoes and spicy pepper to the pan. Stir-fry until the tomatoes release their juice. Then, add soy sauce, salt, and a pinch of sugar for flavor enhancement.
