Stir-fried Garlic Shoots with Shiitake Mushrooms

Shiitake Mushrooms | 300g |
Garlic Shoots | 3 bunches |
Red Chili | 1 |
Soy Sauce | 1 tablespoon |
Oyster Sauce | 1 tablespoon |
Mature Vinegar | 1 tablespoon |
How To Make

Separate the white and green parts of the garlic shoots and slice them. Slice the shiitake mushrooms and red chili for later use. The red chili I used here is not spicy at all; it's just for color. If you like it spicy, feel free to replace it with small chili peppers.

Heat oil in a pan and sauté the white parts of the garlic shoots.

Next, add the green parts of the garlic shoots and stir-fry until fragrant and tender, then set aside.

Add more oil to the pan, then stir-fry the shiitake mushrooms briefly. Add the red chili, along with a tablespoon of soy sauce, a tablespoon of oyster sauce, and a pinch of black pepper and salt to season.

Stir in the previously sautéed garlic shoots, and just before finishing, drizzle a bit of mature vinegar around the edge of the pan.
