Vegetarian Bitter Lettuce Salad
This dish has the word 'bitter' in its name, but those who have tried bitter lettuce know that it isn't actually bitter. Even if there's a hint of bitterness, it won't detract from your dining experience. My husband has had a lot of business dinners lately, enjoying heavy meals with plenty of meat. So, he asked me to prepare some light and refreshing dishes. I immediately thought of bitter lettuce, which is both light and great for cutting through grease.
