Lace Egg Roll Bouquet

Lace Egg Roll Bouquet
On the Qixi Festival, a typical guy might not show much response, but why not surprise someone with a bouquet of delicious treats! We are using yellow swan eggs that meet Japan's raw food standards—free of Salmonella, making them safe to consume. This quantity can make 3-4 bouquets or can be used to create egg rolls or lace egg pancakes, depending on your needs!

Materials

Butter 10 grams
Bittersweet Greens
Cherry Tomatoes
Crispy Sausage
Salad Dressing

How To Make

  1. This is the star of today's recipe: the Yellow Swan Hen Eggs, the only ones awarded the prestigious 'Nobel Prize' in the food industry and the 'Michelin' quality award. Regular eggs lack strict Salmonella control and may carry bacteria, which is why the Yellow Swan Eggs, meeting Japan's raw food standards and free from Salmonella, are the way to go for eating runny eggs!

  2. On the left is a Yellow Swan Egg, while the right shows store-bought eggs. You can tell just by the color of the yolk—Yellow Swan Eggs have a more vibrant orange-yellow yolk and no fishy smell. I usually stock up on these eggs at home.

  3. Crack one Yellow Swan Egg into a bowl, sift in some low-gluten flour, and add 2 grams of sugar. Use a whisk to mix in a zigzag pattern to avoid gluten formation.

  8. Tighten the end of the piping bag and let it rest to allow air bubbles to dissipate. Look at that beautiful orange-yellow batter made with Yellow Swan Eggs!

  9. Use a non-stick pan without adding oil, heating it until it's slightly warm to the touch. If it feels just a little hot, you can start piping the batter. Do not pipe onto a cold pan, as the patterns will spread unevenly.

  10. Cut a small opening (about 3mm) in the piping bag. Pipe circles onto the pan. Mine aren't perfect yet; with practice, you'll get better! Observe the batter as it sets—it takes about 2-3 minutes. If cooked longer, it becomes brittle and harder to fold.

  15. Adjust the sugar amount for sweeter lace egg rolls—this involves rolling your lace circles. Preheat the oven to 150 degrees Celsius for 5-8 minutes; they will become crisp when cooled! If you add some purple sweet potato flour while mixing the batter, you can create pink and purple lace egg rolls. By combining different colored batters, you can make beautiful gradient-effect lace egg rolls.
