Sweet Potato Cheese Salad with Cherry Tomatoes, Sausage, Eggs, and Bitter Lettuce (Lemon-Sesame Dressing)
#Sweet Potato Cheese Salad# An unexpectedly delightful meal! With no groceries left at home, I combined all the ingredients I could find. I never thought that the Li'ao sweet potato (steamed, it’s much less tasty than regular sweet potato and over twice the price) would pair so well with plain cheese slices! It was delicious enough to bring me to tears… The ingredients include plain cheese slices, sweet potato, tomatoes, eggs, garlic sausage, bitter lettuce, and homemade salad dressing (sesame dressing, ginger-flavored maple syrup, red wine vinegar, lemon juice, and olive oil).
Materials
Eggs | 2 pieces |
Cherry tomatoes | a handful |
Olive oil | 1 tablespoon |
Lemon juice | a few drops |
Syrup | 1.5 tablespoons |
Sweet potato | 1 medium-sized |
Cheese slices | 2 slices |
Bitter lettuce | 100 grams |
How To Make
-
1. Wash and chop the vegetables, then spin dry.
-
2. Prepare the dressing: Mix sesame dressing, red wine vinegar, olive oil, and squeezed lemon juice. Let it sit for a few minutes to blend the flavors.
-
3. Stir before serving and let it sit for a few minutes to meld the flavors, but not for too long! Otherwise, it won't look visually appealing!
