18 Seconds to Perfect Japanese Pea Shoots
Before the peas blossom, pluck the tender tips of the vines to harvest the freshest and most seasonal pea shoots. Pea shoots have a unique, fresh aroma and a tender texture. Importantly, harvesting them before flowering ensures that there are no pesticide residues, making them a healthy organic vegetable. This dish has two key points: 1 - Use sesame oil for the stir-fry, avoiding other vegetable oils; 2 - Work quickly; from adding pea shoots to incorporating salt and other seasonings should take only 18 seconds.
