Stir-Fried Garlic Sprouts with Sausage
A little story: The sausages were sent by my dad from Sichuan. Before the Lunar New Year, seeing me complain on social media about the high price of pork and not making sausages, he boldly had a batch made at a local workshop. (Poor parents everywhere; I was just joking around, but he took it to heart.) After drying, they went on quite a journey due to the pandemic before finally reaching Xiamen. They are hard-earned, so I truly cherish them. The sausages are sealed in bags, and when the box arrived, I laid them out on the floor. My son squatted nearby, resting his chin in his hands, furrowing his little brows in distress, saying, 'Mom, if we divide these, we won't have enough to eat!' I thought it was time to give him a proper lesson. (Yes, I’m usually not serious.) So I asked: 'Does Auntie (my close friend) treat you well?' He replied: 'Yes.' I continued: 'What about Second Auntie (another close friend)?' He said: 'Yes.' I asked: 'And the Auntie who’s a bit strict?' He said: 'Yes.' I went on: 'What about Sister Beibei?' He replied: 'Yes.' I concluded: 'Now that we have something they like too, if we share a bit, they would be happy as well. Should we share?' (Those who can't handle spicy food are not included in this discussion.) He reluctantly agreed: 'Yes.' I said: 'Let's share! Alright, lesson's over.' There’s not much left, so we’ll have to save some and stir-fry it!~

How To Make

1. Clean the sausages, put them in a pot with cold water, and boil for about 15 minutes once the water is boiling.

2. Clean the garlic sprouts and cut them, separating the stems from the leaves.

3. After the sausages cool down, slice them.

4. Heat oil in a pan until it’s about 70% hot, then add the sausages and garlic sprouts' stems, frying until fragrant. Next, add the leaves and stir-fry until wilted.

5. Add a small amount of water; no lid is needed, just let it simmer slightly.

6. Season with half a tablespoon of soy sauce, reduce the sauce, and serve. (The addition of water and soy sauce is mainly to help infuse the garlic sprouts with flavor.)
