How To Make

First, prepare the peas by removing the strings from the edges.

Cut the celery diagonally.

Soak the wood ears in warm water for half an hour in advance.

Soak the pig’s kidney in water to remove any blood, cut it into slices, and marinate with ginger strips, salt, a little sugar, soy sauce, starch, and oil.

Blanch the wood ears and celery for one or two minutes, then set aside.

Sear the pig's kidney in a frying pan, although you can use other methods too.

Cook until slightly browned and curved, then set aside.

In a hot pan with cold oil, sauté minced garlic until fragrant.

Add celery, peas, and wood ears to stir-fry, then add fresh matsutake mushrooms, oyster sauce, a pinch of salt, and a splash of white wine, allowing the alcohol to evaporate.

Finally, add the previously seared pig's kidney and stir-fry briefly.
