Stir-Fried Pork with Green Garlic

How To Make

Prepare the ingredients and wash them thoroughly.

Add cooking wine, soy sauce, and a pinch of starch to the pork and mix well. Marinate for about 15 minutes.

The marinated pork will change color slightly.

While the pork is marinating, chop the green garlic and chili peppers, and crush and mince the garlic.

Heat some oil in a pan (a bit more than usual) and once hot, add the marinated pork and stir-fry until it changes color, then remove it from the pan.

There's no need to drain the oil left in the pan; instead, add the chopped chili peppers and minced garlic, sautéing until fragrant. (You can also add some Sichuan peppercorns at this stage.)

Add the chopped green garlic and stir-fry for about half a minute to one minute.

Then add the cooked pork back into the pan, continue stir-frying until fully cooked, and season with a pinch of salt and a little sugar. Stir evenly before serving.
