Watercress Pork Wontons
Materials
Watercress | 1 lb |
Pork Belly | 2 lbs |
Shiitake Mushrooms | 5 pieces |
Eggs | 2 |
Cooking Wine | |
Scallions | |
Dried Shrimp | |

How To Make

1️⃣ Finely chop the meat and mix in some cooking wine, minced ginger, and salt (make sure to add enough—too little will make it bland). Add a pinch of sugar to enhance the flavor, and stir in one direction.

2️⃣ Clean the watercress, blanch it, squeeze out excess water, and chop it finely. (Note ⚠️—the greens may still release water, so be sure to squeeze again.)

3️⃣ Soak the shiitake mushrooms in water, chop them finely, and mix them into the meat filling. Continue stirring in one direction.

4️⃣ Then it's time to wrap the wontons.

5️⃣ Make some for the neighbors too.

6️⃣ After cooking the wontons, place them in the prepared sauce with sesame oil, sprinkle with chopped scallions and cleaned dried shrimp.
